Keto Cheese Sticks

INGREDIENTS
* 1 ¾ cup almond flour
* 2 tablespoons coconut flour
* ¾ teaspoon salt
* ½ teaspoon xanthan gum
* ½ teaspoon garlic powder
* ¼ to ½ teaspoon cayenne (optional)
* ½ cup butter, cut into chunks and softened
* 4 ounces shredded sharp Cheddar, at room temperature
* 1 egg yolk at room temperature
INSTRUCTIONS
*Preheat oven to 300F and line two baking sheets with silicone mats or parchment paper.
* Place the almond flour, coconut flour, salt, xanthan gum, garlic powder and cayenne pepper in a bowl and mix with a machine
*Spread the butter chunks and grated cheese over the dry ingredients, then add the egg yolk. Pulse until well combined and the dough comes together into a ball.
* Transfer dough to a pastry bag fitted with an open star tip and pipe dough into 3-inch lines. They can be quite close together, as they don’t really spread out.
* Bake for 20 to 25 minutes, until golden brown, then turn off the oven and let the straws rest for another 5 minutes. Make sure they don’t brown too much.
* Remove and let cool completely over the pan.
* Serve and enjoy!
Keto Ham and Cheese Bites

INGREDIENTS
* 2 cups of chopped ham
* 4 ounces cream cheese, softened
* 1/3 cup coconut flour
* 1/2 teaspoon of baking powder
* 1 1/2 cups grated cheddar cheese
* 3 beaten eggs
INSTRUCTIONS
*Preheat oven to 350 F.
*Combine ham and cream cheese until fully combined.
*Add remaining ingredients until well combined and chill for 10 minutes. If you skip chilling the dough, it will flatten out as it cooks and won’t be pretty round balls.
*Place on a greased baking sheet with a small cookie scoop.
* Bake for 20 to 23 minutes until golden brown.
Spinach dip

INGREDIENTS
* 8 ounces softened cream cheese
* 1 cup of sour cream
* 10 ounces of fresh spinach leaves
* 1 teaspoon minced garlic
* 1/2 teaspoon salt
* 1/4 teaspoon pepper
* 1/2 cup grated Parmesan cheese
* 1 1/2 cups grated mozzarella cheese
* 1 tablespoon chopped parsley
* bread, cookies, and vegetables to serve
* Cooking spray
INSTRUCTIONS
* Steam or sauté spinach until wilted. Let cool, then drain all the excess water. Chop the spinach into large pieces.
*Preheat oven to 375 degrees F. Coat a small baking pan with cooking spray.
* Place cream cheese, sour cream, cooked spinach, garlic, salt, pepper, Parmesan cheese, and 3/4 cup mozzarella cheese in a bowl. Stir until well combined.
* Spread the spinach mixture on the prepared plate. Top with the remaining mozzarella cheese.
* Bake for 20 minutes or until sauce is bubbling and cheese is melted. Turn oven on to broil and cook for 2-3 more minutes or until cheese begins to brown.
* Sprinkle with chopped parsley then serve with bread, crackers, and greens.
